Ingredients:
- ¾ cup desiccated coconut
- ½ cup milk
- 3 eggs
- 1 cup white sugar
- 150g butter
- 1½ cups plain flour
- 2 tsp baking powder
Instructions:
- Place coconut and milk in a bowl and set aside while preparing cake. Beat eggs.
- Add sugar and beat until combined. Melt butter.
- Sift flour and baking powder into egg mixture. Add melted butter to combine.
- Fold in coconut and milk. Pour mixture into a baking paper lined 20cm round cake tin.
- Bake at 180°C (or 160° fan forced) for 35 to 40 minutes or until cake springs back when lightly touched.
- Leave in tin for 5 minutes before turning on to a cooling rack.
