Ingredients:
- 60g butter
- 1/3 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1 tsp milk
- 2/3 cup SR Flour
- 1/2 cup plain flour
- Hundreds and Thousands – the natural coloured ones work best
- Extra milk
Instructions:
- Cream butter, add sugar gradually, best until light and fluffy.
- Add well beaten egg, vanilla and milk.
- Add sifted SR flour, mix well.
- Gradually mix in sifted plain flour until dough is firm enough to handle.
- Refrigerate at least 1 hour.
- Roll out dough between two sheets of greaseproof pape, cut with floured cutter.
- Put on lightly greased oven trays, brush with milk, sprinkle with hundreds and thousands. This can be done evenly by using the cutter as a guide around the edge of the biscuit and spooning hundreds and thousands into the centre (If you find this takes too long and you can just sprinkle straight on top of the milk).
- Bake in moderate oven for 8-10 mins (or until slightly brown).
- Allow to cool on trays before removing.
